Cream of Shiitake Soup

Cream of Shiitake Soup

Serves 4

2 cups Shiitake, chopped
¼ c. chopped onion
2 c. water
4 Tbsp. butter
3 Tbsp. flour
2 c. light cream or milk

Sauté the mushrooms and onion together with the butter until tender. Combine the water with 2/3rds of this mixture, setting aside the remaining 1/3rd, and simmer 20 minutes. Place the remaining mushroom mixture in a fry pan, sprinkle flour on the top, and sauté for several minutes. Slowly add cream or milk and cook until the mixture thickens. Gently add to the simmering water and mushroom mixture and heat through. Season to taste.
